YUM! Just thought that I would share the love and share a brownie recipe that I have had for a while now. Not sure where the recipe first came from {sorry!} but it wasn't an easy recipe to get! Why? Because my sister found it and she wouldn't share it with me for a VERY long time. MEAN.....yep! She sure was!
Everyone loves Ju's brownies and they have become one of her signature desserts. She would take them to book club, morning teas, BBQ's and family functions. I must have asked her for the recipe a million times but she refused my every single request. I couldn't really take it to heart because she didn't share it with anyone. Until one day as luck would have it, she needed a recipe off a mutual friend and she had to swap her brownie recipe for it! So lucky me, received it as a birthday present one year!
Here it is......
~ 150g butter ~125g dark chocolate ~ 3 eggs ~ 1 1/2 cups caster sugar ~ 1 teaspoon vanilla essence ~ 1 cup plain flour ~ 1/4 cup cocoa powder ~ icing sugar, to dust
PREHEAT oven to moderate 180C. Brush a 20cm square cake tin with oil or melted butter. Line base with baking paper, extending over 2 sides.
PLACE butter and chocolate in a small heatproof bowl. Stand bowl over a pan of simmering water and stir until melted and smooth. Remove from heat and cool slightly.
BEAT eggs, sugar and vanilla together in a large bowl with a wire whisk until well combined. Whisk in chocolate mixture, then stir in sifted flour and cocoa; do not over-beat.
POUR into prepared tin. Bake for 40 minutes, until slightly risen in the centre and just firm when touched lightly. Leave to cool in tin (slice will sink back down to form an even surface) then lift out and cut into squares when completely cold. Dust with sifted icing sugar.
NOTE: Store up to 4 days in an airtight container in the refrigerator.
